Vitamins are essential organic compounds which are involved in the metabolic process. The body cannot produce most of the vitamins itself and they must therefore be contained in the diet.
There are 13 vitamins which are divided into two groups:
- fat soluble vitamins (vitamins A, D, E, K)
- water soluble vitamins (vitamins B-complex, C)
Vitamins are extremely sensitive to external influence such as heat, air and light. For this reason, food must be stored carefully in order to conserve vitamin content
