virgin oils

A virgin oil may not be subjected to external heat before or during the extraction process. Virgin oils are not refined but may be centrifuged and filtered. Unfortunately, the temperature during pressing is not regulated as high pressure can cause very high temperatures (see cold pressed oils ). Nevertheless, the term "virgin" promises a higher quality of oil that merely cold-extraction.
The highest level of quality is described with the term "extra virgin". Olive oils labelled with this term have been extracted at temperatures of no more than 30°C and receive no additional treatment.
