Spices are substances of plant origin which are used as flavoring in the preparation of foods. They also have an appetizing and eupeptic effect and are often used for healing purposes or as a preservative. Most spices are used dry and have a long shelf life. They should be stored in tightly closed containers, away from the light. When purchasing, it should be remembered that there are substantial differences in quality. Often, the valuable oils are distilled and sold to the food, pharmaceutical and cosmetic industries. The remainder is then sold as spice.
