regeneration kitchen
In the regeneration kitchen, pre-prepared foods are reheated and the cooking process is completed. Initial preparation takes place elsewhere. Frozen food (cook & freeze) or chilled products (cook & chill) are used. Foods have both a good sensory quality and a high nutritional value. This catering system requires little kitchen equipment and therefore offers savings in both equipment costs and personnel costs.
