food sample storage
Restaurants and catering operations have a legal duty to archive food samples. From 30 portions upwards, a 100g sample of each food component must be taken immediately before service. These must be stored for a minimum of four days at a temperature of maximum 4°C, to be produced on the request of food hygiene inspectors.
