core temperature, measurement

The temperature at the core of a food product is a critical criterion in quality assurance. The measurement of core temperature is necessary to implement hygiene guidelines (e.g. the maintenance of food service temperature). For some critical foods such as meat, it is possible to ascertain whether the food is fully cooked or only heated on the surface through measurement of core temperature.
