combi steamer

A combi steamer is the combination of a pressureless steam-generating boiler and a hot-air convection oven. Cooking methods using hot air and hot steam can be combined or deployed separately. Combi-steamers are generally sold with a trolley that holds several baking sheets. They facilitate composite cooking processes that achieve lower meat shrinkage, better nutrition retention, low-temperature steaming of delicate foods and other menu-enhancing benefits. Energy consumption is low (4 to 20 KW) and both electricity and water/ waste water connection is necessary.
