Where food is prepared centrally, in a different location to food service. Following production, meals are transported to the individual service sites. The advantage of a central kitchen is the reduced investment as compared to setting up a kitchen on each service site. However, food transport and the associated increased holding time carries a higher microbiological health risk than production in individual kitchens.
