bulk portioning
A large quantity or volume: Many kitchens buy their produce in bulk to save costs. During food distribution, prepared foods are also sometimes delivered in bulk to hospitals and seniors' facilities where they are then divided into individual portions at the service point. This facilitates transport and, unlike plating allows flexible portioning according to the individual wishes of diners.
