External substance which can cause allergies (hypersensitivity of the immune system).
Classifications:

  • animal allergens (e.g. beef protein, chicken protein)
  • plant allergens (e.g. pollen, wheat, nuts)
  • chemical allergens (e.g. amalgam, cosmetics)

There are presently around 20,000 known allergens, most of which are proteins.
